Our dark chocolate is as natural as dark chocolate can be. First the beans are fermented in their natural juice in banana leaves. Then the beans are roasted over and fire and alkaline is never used to remove the cocoa butter. After roasting the beans we put them directly into the stone grinder for 24 hours. We then add pure local honey from a nearby village here in Belize. Chocolate made at its source feom beans that are fresh that have not been sitting in the blazing sun in a shipping container for months or in a cold damp warehouse.
